Ingredients

  • 4 cups fresh corn (or 3 cups frozen corn)
  • 1 cup sharp cheddar cheese, shredded
  • 6 slices thick-cut bacon, diced
  • 8 oz cream cheese, softened
  • 2 tbsp unsalted butter
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook diced bacon over medium heat until crispy. Drain on paper towels.
  2. In a slow cooker, combine cooked bacon, corn, cream cheese, butter, and half of the cheddar cheese. Mix well.
  3. Season with salt and pepper to taste.
  4. Cover and cook on low for 4-5 hours until hot and bubbly.
  5. About 30 minutes before serving, add the remaining cheddar cheese on top to melt.
  6. Stir gently before serving and garnish with sliced green onions.
