  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 cup bell peppers, diced (mixed colors)
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients: chop onions and garlic finely; dice bell peppers.
  2. In a large pan, heat olive oil over medium heat. Add onions and garlic; sauté until fragrant (2-3 minutes).
  3. Stir in the rice and cook for 1-2 minutes until lightly toasted.
  4. Add tomato sauce and chicken broth; bring to a simmer.
  5. Mix in cumin and paprika; let it bloom for about 30 seconds.
  6. Cover and reduce heat to low; cook undisturbed for 18-20 minutes until liquid is absorbed.
  7. Fluff with a fork before serving.
