  • 8 oz sushi-grade salmon, diced
  • 4 sheets nori, cut into squares
  • 1/4 cup mayonnaise
  • 2 tbsp sriracha (adjust to taste)
  • 1/2 cucumber, thinly sliced
  • 1 ripe avocado, sliced
  • 1 tbsp toasted sesame seeds
  • 1 tbsp chives or green onions, finely chopped

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions and let cool slightly.
  2. Preheat oven to 350°F (175°C). Place nori squares in muffin tins and bake for about 5 minutes until crisp.
  3. In a bowl, mix mayonnaise and sriracha; set aside.
  4. Gently toss diced salmon with soy sauce in a separate bowl.
  5. Assemble the cups by layering sushi rice, salmon, spicy mayo, cucumber slices, avocado, sesame seeds, and chives.
