  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, softened
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries, sliced
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk together flour, granulated sugar, baking powder, and salt. Cut in butter until crumbly.
  3. Stir in heavy cream and vanilla just until combined.
  4. Spread half the mixture into the prepared pan and bake for about 15 minutes or until golden.
  5. Toss sliced strawberries with granulated sugar and set aside.
  6. Whip heavy cream with powdered sugar until soft peaks form; fold in remaining strawberries.
  7. Spread strawberry cream over baked shortcake base and dollop remaining batter on top.
  8. Bake for another 20-25 minutes until golden brown. Cool completely before slicing.
