  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 2 tsp paprika
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup vegetable oil (for frying)
  • 1 cup chicken broth
  • 1/2 cup heavy cream

Instructions

  1. Pat chicken breasts dry and season with salt and pepper on both sides.
  2. In a bowl, mix buttermilk with half of the paprika and garlic powder. Soak chicken in this mixture for at least 30 minutes.
  3. On a plate, combine flour with remaining spices. Coat each piece of chicken thoroughly in the flour mixture.
  4. Heat vegetable oil in a skillet over medium heat until shimmering. Fry chicken for 4-5 minutes per side until golden brown and cooked through. Remove and drain on paper towels.
  5. In the same skillet, add more oil if needed and whisk in flour until bubbly. Gradually stir in broth and cream, simmering until thickened.
  6. Serve fried chicken smothered in gravy.
