  • 1 whole chicken (45 pounds)
  • 2 large lemons
  • 1/4 cup extra virgin olive oil
  • 4 cloves garlic (minced)
  • 2 tbsp fresh rosemary (chopped)
  • 2 tbsp fresh thyme (chopped)
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp paprika
  • Salt and pepper to taste
  • Optional: Carrots, potatoes, or onions for roasting alongside

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. In a bowl, combine minced garlic, chopped herbs, olive oil, salt, pepper, and paprika; mix well.
  4. Rub the herb mixture all over the chicken and squeeze half a lemon inside.
  5. Stuff remaining lemon slices and extra herbs into the cavity of the chicken.
  6. Place in a roasting pan and roast for about 1 hour and 20 minutes or until juices run clear from the thickest part.
