Ingredients

  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (any color), diced
  • ½ cup red onion, thinly sliced
  • ¼ cup extra virgin olive oil
  • 3 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil (optional)

Instructions

  1. Cook the pasta in salted boiling water for 8-10 minutes until al dente. Drain and cool under cold water.
  2. While the pasta cooks, chop the cherry tomatoes, cucumber, bell peppers, and red onion.
  3. In a separate bowl, whisk together olive oil, balsamic vinegar, oregano, salt, and pepper.
  4. In a large mixing bowl, combine the cooled pasta and chopped vegetables. Pour the dressing over and toss gently until well mixed.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
