  • 1 cup whole milk
  • 4 tbsp melted butter
  • 1/3 cup granulated sugar
  • 2 tsp pure vanilla extract
  • 1 cup mascarpone cheese
  • 1 cup brewed espresso (cooled)
  • 2 tbsp powdered sugar
  • 2 tbsp cocoa powder (for dusting)

Instructions

  1. Prepare the crepe batter by mixing flour, eggs, milk, melted butter, sugar, and vanilla in a bowl until smooth. Let it rest for 30 minutes.
  2. Heat a nonstick skillet over medium heat. Pour about 1/4 cup of batter into the pan and swirl to coat evenly. Cook for 1-2 minutes on each side until golden. Repeat with remaining batter.
  3. For the filling, whip mascarpone cheese with powdered sugar, cooled espresso, and vanilla until fluffy.
  4. Layer crepes on a serving platter, spreading a layer of mascarpone filling between each crepe until all are stacked.
  5. Chill in the fridge for at least one hour before serving. Dust with cocoa powder before slicing.
