- 9 no-boil lasagna noodles
- 4 cups ripe tomatoes, diced
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 15 oz ricotta cheese
- 2 large eggs
- 3 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 tsp Italian seasoning
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add garlic until golden.
- Stir in diced tomatoes and Italian seasoning; simmer for about 15 minutes until thickened.
- In a bowl, mix ricotta cheese with eggs, salt, and pepper until smooth.
