  • 4 large russet potatoes
  • 1/2 cup unsalted butter (1 stick)
  • 1 cup full-fat sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup crispy bacon bits
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and pierce the russet potatoes with a fork.
  2. Bake potatoes directly on the oven rack or on a baking sheet for about 45 minutes until tender.
  3. Once cool enough to handle, scoop out the potato flesh into a large bowl. Mix in butter, sour cream, half of the cheddar and mozzarella cheeses, salt, pepper, and bacon bits until creamy.
  4. Stir in chopped green onions. Transfer the mixture to a greased baking dish and spread evenly.
  5. Top with remaining cheeses and additional bacon if desired. Bake at 350°F (175°C) for about 20 minutes until bubbly and golden brown.
