- 4 large russet potatoes
- 1/2 cup unsalted butter (1 stick)
- 1 cup full-fat sour cream
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup crispy bacon bits
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wash and pierce the russet potatoes with a fork.
- Bake potatoes directly on the oven rack or on a baking sheet for about 45 minutes until tender.
- Once cool enough to handle, scoop out the potato flesh into a large bowl. Mix in butter, sour cream, half of the cheddar and mozzarella cheeses, salt, pepper, and bacon bits until creamy.
- Stir in chopped green onions. Transfer the mixture to a greased baking dish and spread evenly.
- Top with remaining cheeses and additional bacon if desired. Bake at 350°F (175°C) for about 20 minutes until bubbly and golden brown.
