  • 2 medium zucchinis (spiralized)
  • 1 red bell pepper (sliced)
  • 1 cup carrots (julienned)
  • 4 green onions (sliced)
  • 3 tbsp natural peanut butter
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 2 tbsp lime juice
  • 1 tsp Sriracha sauce
  • Fresh cilantro (for garnish)
  • ¼ cup chopped peanuts (for garnish)

Instructions

  1. Spiralize the zucchinis into noodles and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add red bell pepper and carrots; sauté for about 5 minutes until softened but crisp.
  3. Add zucchini noodles and minced garlic to the skillet; cook for an additional 2 minutes until just tender.
  4. In a small bowl, whisk together peanut butter, soy sauce, fish sauce, brown sugar, lime juice, and Sriracha until smooth. Pour over the vegetable mixture in the skillet.
  5. Toss everything together for another minute to coat well. Remove from heat and garnish with chopped peanuts and cilantro before serving.
