Ingredients

  • 1 lb ground lamb or beef
  • 1 large onion
  • 3 cloves garlic
  • 1 can (14 oz) diced tomatoes
  • 2 cups milk
  • 4 tbsp butter
  • 4 tbsp flour
  • Spices: cinnamon, nutmeg
  • 1 cup grated Parmesan cheese

Instructions

  1. Slice eggplants into ½-inch rounds, sprinkle with salt, and let sweat for 30 minutes.
  2. Sauté chopped onion in olive oil until translucent (about 5 minutes).
  3. Add ground meat, minced garlic, cinnamon, nutmeg, salt, and pepper; cook until browned (about 8 minutes).
  4. For the béchamel: Melt butter in a saucepan, whisk in flour until smooth; gradually add milk while whisking until thickened (5-7 minutes).
  5. In a baking dish, layer eggplant slices, meat mixture, and béchamel sauce. Repeat layers.
  6. Preheat oven to 375°F (190°C) and bake uncovered for 45 minutes until golden brown. Let cool slightly before serving.
