- 3 large eggs (room temperature)
- 1/2 cup unsalted butter (melted)
- 1/2 cup whole milk
- 1 tsp pure vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease mini muffin tins or line with paper liners.
- In a bowl, whisk together flour, baking powder, salt, and sugar until well combined.
- In another bowl, beat eggs until frothy. Mix in melted butter, milk, and vanilla extract until smooth.
- Gently fold the dry mixture into the wet ingredients using a spatula until just combined.
- Spoon batter into prepared muffin tins about two-thirds full and bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
- Cool in pans for five minutes before transferring to wire racks. Serve plain or with toppings as desired.
