Instructions

  1. Preheat your oven to 400°F (200°C). Wash and trim the beets, then wrap them in foil and roast for about 45 minutes until tender.
  2. Allow the roasted beets to cool slightly, then peel under running water.
  3. Rinse and dry the mixed greens thoroughly in a large bowl.
