Ingredients

  • 2 lbs beef chuck roast, cut into cubes
  • 8 oz fresh button mushrooms, sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup sour cream
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 4 cups egg noodles or rice, for serving

Instructions

  1. Prep your ingredients by chopping the beef, slicing the mushrooms, and dicing the onion.
  2. In a skillet, heat oil over medium-high heat and sear the beef until browned on all sides.
  3. Transfer the beef to the slow cooker with onions, mushrooms, garlic, broth, Worcestershire sauce, salt, and pepper.
  4. Cover and slow cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  5. Stir in sour cream just before serving.
