- 3 cloves fresh garlic, minced
- 1 medium onion, chopped
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup long-grain white rice
- 1 tsp salt (to taste)
- ½ tsp black pepper (to taste)
- 1 tsp smoked paprika (optional)
- 1 cup mixed vegetables (peas, carrots) – optional
Instructions
- Season the chicken breasts with salt, pepper, and paprika. Set aside.
- Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until translucent, about 3-4 minutes.
- Add seasoned chicken to the skillet; brown each side for approximately 5-7 minutes.
- Pour in chicken broth and heavy cream; stir well and scrape the bottom of the pan to incorporate flavors.
- Stir in uncooked rice, cover, and reduce heat to low. Simmer for 20 minutes until rice absorbs all liquid.
- Remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.
