Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup long-grain white rice
  • 1 tsp salt (to taste)
  • ½ tsp black pepper (to taste)
  • 1 tsp smoked paprika (optional)
  • 1 cup mixed vegetables (peas, carrots) – optional

Instructions

  1. Season the chicken breasts with salt, pepper, and paprika. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until translucent, about 3-4 minutes.
  3. Add seasoned chicken to the skillet; brown each side for approximately 5-7 minutes.
  4. Pour in chicken broth and heavy cream; stir well and scrape the bottom of the pan to incorporate flavors.
  5. Stir in uncooked rice, cover, and reduce heat to low. Simmer for 20 minutes until rice absorbs all liquid.
  6. Remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.
