Ingredients

  • 2 cups rotini pasta (uncooked)

  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente, then drain and let cool.
  2. Rinse the spinach under cold water and shake off excess moisture.
  3. In a large bowl, combine the cooled pasta, spinach, feta, and cranberries; toss gently to mix.
  4. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper; drizzle over the salad while tossing to coat evenly.
