Description

Tex-Mex Beef Enchiladas are a cheesy, flavorful delight that combines seasoned ground beef and vibrant spices, all wrapped in tortillas and baked to perfection. Perfect for any occasion!


Ingredients

  • 1 lb lean ground beef
  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack mix)
  • 1 cup enchilada sauce (store-bought or homemade)
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook ground beef until browned (7-10 minutes). Drain excess fat.
  3. Stir in taco seasoning until well combined.
  4. Spoon about 1/4 cup of the beef mixture onto each tortilla, roll tightly, and place seam-side down in the baking dish.
  5. Pour half of the enchilada sauce over the rolled tortillas and top with shredded cheese.
  6. Bake for 20-25 minutes or until cheese is melted and bubbly. Serve hot with sour cream and cilantro.
