Ingredients

  • 34 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 cup full-fat Greek yogurt
  • 1 medium cucumber, grated
  • 1 clove fresh garlic, minced
  • Juice of 1 lemon
  • 2 tbsp fresh dill or mint, chopped
  • Salt and pepper to taste
  • 4 cups mixed greens or romaine lettuce

Instructions

  1. Preheat your grill or skillet over medium-high heat. Season chicken breasts with salt and pepper.
  2. Grill or sauté chicken for 6-7 minutes per side until golden brown and the internal temperature reaches 165°F (75°C). Let rest before chopping into bite-sized pieces.
  3. In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped herbs, salt, and pepper to create the tzatziki sauce.
  4. In a large bowl, combine mixed greens with chopped chicken. Pour tzatziki sauce over and gently toss to coat.
  5. Serve in bowls or wrap in pita bread.
