  • 4 medium beets (about 500g)
  • 1 cup chopped cabbage (about 150g)
  • 1 cup grated carrots (about 120g)
  • 1 cup diced potatoes (about 150g)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 4 cups vegetable broth
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste
  • ½ cup sour cream

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap beets in foil and roast for about an hour until tender.
  2. In a large pot, heat oil over medium heat. Sauté onions until golden brown; add garlic and cook for another minute.
  3. Add grated carrots, diced potatoes, chopped cabbage, and roasted beets to the pot. Stir well.
  4. Pour in vegetable broth to cover the vegetables by about two inches. Stir in vinegar, salt, and pepper.
  5. Bring to a gentle boil; reduce heat to low and simmer for about 30 minutes until all vegetables are tender.
  6. Serve hot with a swirl of sour cream and fresh dill on top.
