Method
Preparing the Squash
- Preheat your oven to 400°F (200°C).
- Slice the acorn squash in half and scoop out the seeds and pulp.
- Brush the inside of each squash half with olive oil and sprinkle with salt, pepper, and cinnamon if using.
Roasting the Squash
- Place the squash halves cut-side down on a baking sheet lined with parchment paper.
- Roast in the preheated oven for about 25-30 minutes, or until the flesh is tender and easily pierced with a fork.
- Remove from oven and let cool slightly before flipping them over.
Finishing Touches
- Sprinkle the toasted pecans and fresh parsley over the roasted squash halves before serving.
- Serve warm as a side dish or a healthy snack.
